Mediteranean Open Face Sandwich:

Ingredients: half a roma tomato, olive oil cooking spray, 1 piece ezekiel sesame bread, 1 small red baby sweet bell pepper, 2 green onions, 1/2 cup baby spinach, 1 oz honey goat cheese, 1 tablespoon roasted red pepper with eggplant and garlic spread

*please note that alterations can always be made

directions: chop tomato, bell pepper and green onion and sautee in pan covered with olive oil spray.while sauteeing, toast the ezekiel bread. turn off stove but leave sautee in pan. smear goat cheese over bread than smear roasted red pepper spread over the cheese. put the baby spinach leaves on top, then add the tomato onion and bell pepper on top of spinach.

Spicy Negative Calorie Super Salad:

Ingredients: 1.5 cups baby spinach, 6 diced baby carrots, 1 diced celery stalk, however much diced onion you want, a little bit of cut green onion, 1 or 2 diced strawberries, between 2 and 4 diced cherry tomatoes, between 1/4 and 1/2 of a diced apple, cinnamon, hot sauce

you can add a teeny bit of cut nuts if you’d like, it tastes great with it. if you put the nuts in the oven for 5-10 minutes they will be nice and toasted too. it also tastes great if you add in raspberries and/or blackberries and a half ounce of goat cheese.

want less spicy? try mixing spicy brown mustard with honey for a slightly spicy honey mustard, or use regular mustard with honey for a sweet and not spicy dressing.

orange grapefruit salad

INGREDIENTS: 1 grapefruit, 3 oranges, runny honey, warm water, walnuts and pecans, one lime, mint leaves

chop up grapefruit and orange, mix in bowl. add 2 tablespoons warm water and 2 tablespoons of the liquidy honey in a bowl. juice the lime into the water and honey mixture. minced half of the lime rind  mix in with salad. tear up mint leaves and add in salad. add in the water and honey mixture and toss. place in fridge for 2 hours. chop nuts and mix it in with salad. bake at 400 degrees faranheit for 10-15 minutes.

tip: if you want it to be sweeter, add brown sugar and more honey. more honey tastes great added afterwards, and brown sugar can be added before or after the oven. tastes great with coolwhip for dessert or plain for breakfast.

delicious veggie half sandwich with carrots and dip:

ingredients:

1 slice of ezekiel bread

1 teaspoon of condiment of choice to moisten bread, i used aioli garlic mustard spread.

1/2 leaf of romaine

pinch-full of arugula leaves

pinch-full of baby spinach

little bit of green onion

pinch of alfalfa sprouts

1 cherry tomato

2 jalapeno slices

2 cucumber slices

10 baby carrots

half tablespoon of tahini sauce

directions:

toast the slice of ezekiel bread. for extra flavor try rubbing garlic on the toasted bread. cut the piece diagonally. smear one teaspoon of a condiment such as mustard or ranch or low-cal mayo on the bread. add the romaine, arugula and  baby spinach. spread the chopped green onion on the sandwich. cut the cherry tomato into 4 pieces and put on sandwich along with the jalapeno and cucumber. add the alfalfa sprouts then top with the other half of the toasted bread. stick in a toothpick to help keep it together. place the baby carrots and tahini sauce on the plate next to it. tastes great with tea, iced or hot.

sandwich calories: ~100 calories

carrots and dip: 53 calories

Mom’s Famous Sammich!

Ingredients:

  • ~half a can of tuna
  • vegennaise
  • cinnamon raisin ezekiel bread
  • 1/2 an avacado
  • garlic mustard aioli, preferably. if not, your choice of aioli or whatever mustard you prefer.
  • 1/2 a medium tomato

directions:

  • mix however much vegennaise you like in your tuna with your tuna, if you like relish add that with the tuna and vegennaise.
  • toast the bread and start slicing the avacado into strips
  • chop tomato
  • spread aioli or mustard onto toasted bread
  • place tuna on one slice
  • place avacado then tomato on top
  • make it into a sammich!

can be between 375 and 415 calories, if its more than that you over did something(s). it’s good if you just want to eat or two meals that day, and its super yummy!
